Cheese Lemon Pizza

  1. Preheat oven to 425F.
  2. Grate the peel from 1 lemon.
  3. Peel and thinly slice the other 3 and remove seeds.
  4. Set aside.
  5. On a floured surface, pat the dough out, forming a thin 10-12 inch round crust.
  6. Brush with oil and sprinkle with the grated lemon peel.
  7. In a large skillet, heat enough oil to coat the pan over medium heat.
  8. Add lemon slices, garlic, jalapenos and bell pepper.
  9. Saute for 2 minutes.
  10. Spread evenly over the pizza.
  11. Spread cheese evenly over the pizza and then sprinkle with parsley.
  12. Bake for about 20 minutes or until the crust is crisp and the cheese bubbles.
  13. Slice and serve.
