Cafeteria Carrot Souffle Recipe
- 2 lb carrots, minced
- 1/2 c. melted butter
- 1 c. white sugar
- 3 Tbsp. all-purpose flour
- 1 tsp baking pwdr
- 1 tsp vanilla extract
- 3 x Large eggs, beaten
- 1 tsp confectioners' sugar for dusting
- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of salted water to a boil.
- Add in carrots and cook till tender, about 15 min.
- Drain and mash.
- To the carrots add in melted butter, white sugar, flour, baking pwdr, vanilla extract and Large eggs.
- Mix well and transfer to a 2 qt casserole dish.
- Sprinkle with confectioners' sugar.
- Bake in preheated oven for 30 min.
