Frito Quejo (Fried Cheese) Recipe
- 1 package of small Azumaya squares
- 1/2 c. fresh minced parsley
- 1/2 c. minced linguica
- finely shredded or possibly grated blue cheese (Parmesan or possibly ricotta are acceptable)
- 1 Tbsp. thyme, chopped
- one saucepan full of oil for frying
- Fill one square at a time with cheese, linguica, parsley, and thyme.
- Don't fill so much which it cannot be closed.
- Fold one corner diagonally towards the other corner, then press the sides, pinching together to seal.
- When closed, take the two folded sides and draw back to healthy pinch together.
- Fry in warm vegetable oil till golden.
- Cook's Note: Azumaya squares are a pasta like similar to wonton or possibly egg roll wraps.
