Chilean-Style Lentils

  1. Place lentils in medium saucepan.
  2. Add water and bouillon cube; stir.
  3. Bring to boil on medium-high heat.
  4. Reduce heat to medium-low; simmer 30 min.
  5. or just until lentils are tender.
  6. Meanwhile, heat dressing in medium skillet on medium-high heat.
  7. Add peppers and onions; cook and stir 6 min.
  8. or until vegetables are tender.
  9. Spoon into medium serving bowl; set aside.
  10. Add lentils to vegetable mixture along with the ham and cilantro; mix lightly.
  11. Top with the eggs; sprinkle with cheese.
