Nolte'S Serious Beans
- 1/2 lb. bacon, cut up, browned, drained and reserved
- 1 lb. Polish sausage, thin sliced and browned
- 1 large onion, coarsely chopped
- 1 (15 oz.) can kidney beans
- 1 (15 oz.) can butter beans
- 1 (15 oz.) can lima beans
- 1 (15 oz.) can homestyle baked beans
- 1/2 c. ketchup
- 1/2 c. dry red wine
- 3 Tbsp. brown sugar
- 1 tsp. dry mustard
- 1 or 2 cloves garlic
- black pepper to taste
- Tabasco to taste (add last)
- 1 to 2 Tbsp. bacon fat
- Start with skillet.
- Brown the bacon; drain and reserve. Brown the Polish sausage; set aside.
- Saute the chopped onion in the remaining bacon fat.
- Open the kidney beans, butter beans and lima beans; drain in colander.
- Combine the remaining ingredients, except bacon fat, with above ingredients.
- Mix all above ingredients together with the bacon fat.
- Bake, uncovered at 350u0b0 for 1 hour and 15 minutes.
- Serve hot or at room temperature. Better the second day.
- (I usually double recipe.)
