Delicious Easy to Make Quinoa!
- 1 cup quinoa
- 1 raw red bell pepper, chopped
- 1 cup corn kernel (any kind- from a can, frozen...)
- 3 -4 scallions, chopped
- 3 tablespoons minced fresh flat leaf parsley
- 6 tablespoons extra virgin olive oil
- 3 tablespoons lime juice
- salt and pepper
- Prepare quinoa according to directions on package (Usually 2 cups of water with the 1 cup of quinoa, quinoa is ready when it has absorbed all the water.
- In a separate bowl, combine the olive oil, lime juice, and salt and pepper (to taste) mix
- Put the quinoa in a bowl and fluff, then add the dressing (olive oil and lime).
- Add in the chopped vegetables and mix around.
- Enjoy!
