Sesame Oil Chicken with Potatoes and Shiitake
- 1 whole Chicken, Chopped To Bite Size Pieces With Skin On
- 3 Tablespoons Sesame Oil
- 1 whole Large Potato, Skinned And Cubed
- 1 piece Fresh Young Ginger, About 1cm, Skinned And Thinly Sliced
- 4 cloves Garlic, Minced
- 4 pieces Large Dried Shiitake, Rehydrated And Thinly Sliced
- 2 Tablespoons Light Soy Sauce
- 1/2 cups Chicken Broth
- 2 teaspoons Toasted Sesame Seeds (optional)
- Salt And Pepper

- Marinate the chicken pieces with a few pinches of salt and pepper.

- In a wok or deep pan, heat up the sesame oil over medium-high heat and fry the cubed potatoes until they are lightly golden.
- 3.
- Add the ginger slices and fry till fragrant, about 1 minute.
- Dont let them brown.

- Throw in the minced garlic and similarly fry till fragrant but not brown.
- 5.
- Add the shiitake and chicken pieces as well as soy sauce.
- Turn to high heat and let the chicken pieces sear for about 1-2 minutes, stirring occasionally.
- 6.
- Pour in the chicken broth and let it come to a simmer before covering the wok and turning it down to low heat.
- Let it cook for about 15 minutes, stirring occasionally.
- 7.
- Season with salt and pepper to taste (I didnt do this as I marinated my chicken pieces sufficiently).
- 8.
- Dish out and sprinkle with sesame seeds.
- Serve!
