Sesame Oil Chicken with Potatoes and Shiitake

  2. Marinate the chicken pieces with a few pinches of salt and pepper.

  4. In a wok or deep pan, heat up the sesame oil over medium-high heat and fry the cubed potatoes until they are lightly golden.

  6. Add the ginger slices and fry till fragrant, about 1 minute.
  7. Dont let them brown.
  8. 4.
  9. Throw in the minced garlic and similarly fry till fragrant but not brown.
  10. 5.
  11. Add the shiitake and chicken pieces as well as soy sauce.
  12. Turn to high heat and let the chicken pieces sear for about 1-2 minutes, stirring occasionally.

  14. Pour in the chicken broth and let it come to a simmer before covering the wok and turning it down to low heat.
  15. Let it cook for about 15 minutes, stirring occasionally.
  16. 7.
  17. Season with salt and pepper to taste (I didnt do this as I marinated my chicken pieces sufficiently).

  19. Dish out and sprinkle with sesame seeds.
  20. Serve!
