Turtle Cheesecake
- 1 12 cups graham cracker crumbs
- 6 tablespoons butter, melted
- 1 12 tablespoons sugar
- 12 cup pecans, chopped
- 2 -8 ounces cream cheese, softened
- 1 (14 ounce) can condensed milk
- 14 cup lemon juice
- 3 eggs
- 12 cup chocolate chips
- 8 ounces caramel topping
- 12 cup pecans, chopped
- Preheat oven to 300 degree F. Mix cracker crumbs, sugar, nuts and margarine.
- Press into 9-inch spring form or cake pan.
- Set aside.
- Blend cream cheese until creamy.
- Mix in sweetened condensed milk and lemon juice; then add eggs and mix.
- Pour over crust.
- Sprinkle the chocolate chips over the cream cheese layer and allow them to sink.
- Bake for 50-55 minutes.
- Remove and drizzle caramel topping over the top and sprinkle with chopped nuts.
- Bake for additional five minutes.
- Remove, cool, and refrigerate.
