Mint Chocolate Cookies

  1. Melt margarine and sugar together over hot water or in the microwave.
  2. Stir until chocolate is completely melted.
  3. Into the chocolate mix, add one cup sugar, egg, vanilla and mint extracts until completely mixed.
  4. Add dry ingredients and mix well.
  5. Refrigerate for at least 30 minute.
  6. Preheat oven to 375.
  7. Shape dough into 1-inch balls and roll in addl sugar.
  8. You may also roll them in finely chopped nuts.
  9. Bake on ungreased cookie sheets 10 minutes or until set.
  10. Do not underbake, as, if they are too soft, they will fall apart.
