White Chicken Chili
- 2 Rotisserie Chickens (Deboned and chopped) discard skin
- 2 can 19oz Cannellini Beans (White Kidney)
- 1 as needed Olive Oil
- 2 can 19oz Chick Peas
- 2 can 32oz Chicken Broth
- 6 clove Minced Garlic
- 1 large Sweet Onion
- 3 packages McCormick White Chili Seasoning
- 1/3 cup Heavy Whipping Cream
- 1/4 cup Butter
- 1 as needed Chopped Cilantro or Green Onions
- 1 as needed Colby and Monterey Jack Cheese
- 1 Lime Tortilla Strips (Salad Topping Section)
- 1 Lime
- In a large stock pot heat olive oil and butter, saute onions and add garlic.
- ( Don't over cook the garlic)
- Add chopped rotisserie chicken and McCormick White Chili Seasoning then brown lightly.
- (Add additional oil if needed)
- Add all beans and chicken broth.
- Add more or less chicken broth for your preferred consistency.
- Add heavy Whipping Cream at the end.
- Garnish with cheese, lime tortilla strips, cilantro or green onions, sour cream and a slice of lime!
