Mom's (Carolyn's) Cheesecake

  1. Preheat oven to 350 degrees F (176 degrees C).
  2. Coat bottom of 10" Spring Form Pan with graham cracker crumbs (approx.
  3. 1/4 inch deep or however you like the crust).
  4. Beat cream cheese in mixer until smooth.
  5. Add sugar gradually while beating cheese.
  6. Add eggs one at a time while beating at low speed (beat in well before each egg).
  7. Add vanilla and sour cream, beat until smooth.
  8. Pour into pan, bake for one hour.
  9. Let cool for at least one hour (in refrigerator).
  10. It will drop in height.
  11. Loosen cake edge with knife and release pan.
