Hot Pasta Salad Vinaigrette
- 1/4 c. olive oil
- 1 Tbsp. vegetable oil
- 2 medium ribs celery, sliced
- 1 medium onion, diced
- 2 cloves garlic, crushed
- 8 oz. small macaroni shells
- 1/4 c. red wine vinegar
- 1/2 tsp. sugar
- 1/2 tsp. dry mustard
- 1/4 tsp. dried oregano
- 1/4 tsp. dried basil
- 8 oz. ham, cut into thin strips
- 8 oz. Mozzarella cheese, cubed
- freshly grated Parmesan cheese
- In large skillet over medium-high heat, heat 1 tablespoon vegetable oil.
- Add celery, onion and garlic.
- Cook about 10 minutes, stirring frequently.
- Meanwhile, cook shells in boiling water according to package directions.
- When vegetables are ready, add 1/4 cup olive oil, vinegar, sugar, mustard, oregano and basil. Bring to boil, stirring until blended.
- Remove from heat.
- Drain shells.
- Mix all ingredients together.
- Serve immediately, sprinkled with Parmesan cheese.
- Makes 2 to 3 main dishes or 4 to 6 side dish servings.
