Yellowtail with Shio-Koji Steamed in a Microwave
- 2 large Yellow tail (buri)
- 1 tbsp Sake
- 2 tsp Shio-koji (salt-fermented rice malt)
- 5 cm Daikon radish
- 1/3 Carrot
- 1 stalk Green onion
- 1 tbsp Sake
- 2 tsp Garlic soy sauce
- 1 tsp Sesame oil
- Chop each yellow tail into 3 pieces, and marinate in the ingredients for 15 minutes.
- Julienne the daikon radish and carrot, then cut the green onion into thin round slices.
- Arrange the daikon radish and carrot in a heatproof dish, and swirl in the ingredients.
- Place the yellow tail on top, loosely cover with plastic wrap, and microwave for 4-5 minutes.
- When finished cooking, sprinkle with the green onion.
