Baked Parmesan Potatoes
- 4 large potatoes
- 2 tablespoons butter, melted
- salt and pepper
- 14 cup low-fat parmesan cheese
- 2 tablespoons Italian seasoned breadcrumbs
- Preheat the oven to 375F.
- Wash the potatoes and slice them 3/4 of the way through (make them about 1/4 inch thick).
- Place on an oiled baking sheet.
- Drizzle the butter over the potatoes.
- Season with the salt and pepper.
- Bake for 45 minutes.
- Mix together the cheese and breadcrumbs.
- Sprinkle the mixture of the potatoes and bake for an additional 20 minutes (or until lightly browned).
