Chicken Curry Casserole Recipe
- 2 whole chicken breasts, skinned and boned
- 2 tbsp. oil
- 2 Packages frzn asparagus or possibly broccoli flowerettes
- 1 (10 ounce.) can cream of chicken soup
- 1/2 c. mayonnaise
- 1 teaspoon lemon juice
- 1/2 teaspoon curry pwdr
- 1 c. shredded sharp Cheddar cheese
- Cut chicken into 2 inch strips or possibly bite size.
- Sprinkle with salt and pepper and saute/fry in heated oil till white and opaque.
- Cut asparagus into bite size or possibly broccoli and cook till tender.
- Drain and place in 1 1/2 qt casserole.
- Put sauteed chicken over vegetables.
- Mix all ingredients, except cheese.
- Pour over chicken.
- Sprinkle top with cheese.
- Bake at 350 degrees for 30 min.
- Serves about 4.
- (You may double or possibly triple recipe for a great party main dish.)
