G'shtuptaful Lew'r - Stuffed Calf Liver

  1. For the dressing: combine the first five ingredients; add butter and toss lightly with a fork.
  2. Wash liver in cold salted water and dry well.
  3. Make an incision in the thickest part using a sharp knife.
  4. Fill with stuffing.
  5. Season with salt and pepper; dredge with flour.
  6. Place in roasting pan and place strips of pork on top.
  7. Add a little water and bake at 350F for 1 hour.
