Shrimp Gumbo

  1. Melt butter in Dutch oven.
  2. Stir in flour and cook over low heat until brown.
  3. Add celery, onions and bell pepper.
  4. Cook slowly until tender.
  5. Add rest of ingredients except shrimp and rice.
  6. Simmer, uncovered, 45 minutes.
  7. Add shrimp, cover and simmer about 7 minutes or until shrimp are pink and tender.
  8. Serve over hot rice.
  9. Makes 8 servings.
