Shrimp Gumbo
- 1/4 c. margarine
- 2 Tbsp. flour
- 1/2 c. celery, chopped
- 1/2 c. chopped onion
- 1/2 c. bell pepper, chopped
- 1 can tomatoes
- 1 pkg. frozen okra
- 1 (6 oz.) can tomato paste
- 3 beef bouillon cubes
- 4 tsp. Worcestershire sauce
- 1/2 tsp. chili powder
- 1 bay leaf
- 1 1/2 Tbsp. salt
- 1/4 tsp. pepper
- 3 c. water
- 2 lb. shrimp, deveined
- 3 c. hot rice
- Melt butter in Dutch oven.
- Stir in flour and cook over low heat until brown.
- Add celery, onions and bell pepper.
- Cook slowly until tender.
- Add rest of ingredients except shrimp and rice.
- Simmer, uncovered, 45 minutes.
- Add shrimp, cover and simmer about 7 minutes or until shrimp are pink and tender.
- Serve over hot rice.
- Makes 8 servings.
