Potato & Chive Egg Bake

  1. Heat oven to 325F.
  2. Spray 8-inch square glass baking pan with no-stick cooking spray; set aside.
  3. Melt butter in 12-inch nonstick skillet until sizzling.
  4. Add potatoes; cook over medium heat 3 minutes.
  5. Add onion, garlic, salt and pepper; continue cooking 4-6 minutes or until potatoes are crisply tender.
  6. Stir in cheese, roasted red peppers and chives.
  7. Place potato mixture into prepared pan.
  8. Combine eggs and half & half in bowl; beat at medium speed until well mixed.
  9. Pour egg mixture over potatoes in pan.
  10. Bake 45-55 minutes or until knife inserted in center comes out clean.
