Potato & Chive Egg Bake
- 2 tablespoons Land O Lakes Butter
- 6 medium (2 cups) new red potatoes, unpeeled, cut into 1/2-inch pieces
- 1 small (1/2 cup) onion, coarsely chopped
- 1 teaspoon finely chopped fresh garlic
- 3/4 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup shredded Asiago cheese blend
- 1/2 cup coarsely chopped roasted red pepper
- 2 tablespoons chopped fresh chives
- 10 Land O Lakes Eggs
- 1/2 cup Land O Lakes Half & Half
- Heat oven to 325F.
- Spray 8-inch square glass baking pan with no-stick cooking spray; set aside.
- Melt butter in 12-inch nonstick skillet until sizzling.
- Add potatoes; cook over medium heat 3 minutes.
- Add onion, garlic, salt and pepper; continue cooking 4-6 minutes or until potatoes are crisply tender.
- Stir in cheese, roasted red peppers and chives.
- Place potato mixture into prepared pan.
- Combine eggs and half & half in bowl; beat at medium speed until well mixed.
- Pour egg mixture over potatoes in pan.
- Bake 45-55 minutes or until knife inserted in center comes out clean.
