Pomegranate Stuffed Mushrooms Tofu

  1. Chop mushroom stems, set asidee.
  2. Pat tofu dry and mush it with fork then blend cheese with it.
  3. Add grain, mushroom stems and 1/4 cup seeds.
  4. Divide mix into 6 and shape flat patties.
  5. In separate bowl, combine walnuts, onions, peppers and oil.
  6. Mix well.
  7. Stir in remaining seeds.
  8. Stuff button mushrooms with filling.
  9. Sprinkle each with lettuce.
  10. Place on lettuce bed.
