Hazelnut Coated Salmon

  1. preheat oven to 375F.
  2. Place hazelnuts on a baking sheet and bake for 8 minutes.
  3. Finely chop hazelnuts.
  4. Increase oven to 450F.
  5. Combine apple butter, mustard, thyme, and pepper.
  6. Spread on salmon.
  7. Top with hazelnuts.
  8. Bake until salmon just flakes with a fork, about 12 minutes, depending on thickness.
  9. Goes great with herbed rice or savory couscous.
