Hazelnut Coated Salmon
- 14 cup hazelnuts
- 2 (6 ounce) salmon fillets
- 1 tablespoon apple butter
- 12 tablespoon Dijon mustard
- 14 teaspoon thyme
- 14 teaspoon black pepper
- preheat oven to 375F.
- Place hazelnuts on a baking sheet and bake for 8 minutes.
- Finely chop hazelnuts.
- Increase oven to 450F.
- Combine apple butter, mustard, thyme, and pepper.
- Spread on salmon.
- Top with hazelnuts.
- Bake until salmon just flakes with a fork, about 12 minutes, depending on thickness.
- Goes great with herbed rice or savory couscous.
