Spring Potato Taramasalata

  1. Chop the potatoes in half.
  2. Put in a heatproof dish with a little water.
  3. Cover it with plastic wrap and microwave.
  4. Peel, then mash with a masher.
  5. Remove the membrane from the tarako and put into a bowl.
  6. Mix with the lemon juice and butter.
  7. Add the potatoes to the same bowl.
  8. Toss with some mayonnaise.
  9. Season with salt and pepper.
