Irish Freckle Bread

  1. Cook potato in 1 cup water until tender.
  2. Mash potato and add water to make 1 cup and return to pan.
  3. Stir in currants.
  4. Cool to lukewarm.
  5. Put yeast into 1/2 cup warm water in large bowl.
  6. Stir until yeast dissolves.
  7. Stir in potato mixture, eggs, sugar and melted oleo.
  8. Stir in 2 cups flour with salt.
  9. Turn onto board. Knead until smooth.
  10. Place in greased bowl.
  11. Let rise 1 hour until double.
  12. Punch down.
  13. Divide in half.
  14. Makes two 8-inch round breads.
  15. Let rise again.
  16. Bake at 375u0b0 for 30 minutes or until golden brown.
