Polenta Sticks

  1. Place stock in a medium sauce pan and bring to a boil.
  2. Once it is boiling, gradually whisk in the polenta, doing it slowly to avoid getting clumps.
  3. Cook the mixture 2-3 minutes or until it starts to thicken.
  4. Once the polenta is thickened, remove it from heat and add the parmesan cheese, butter, salt, and pepper.
  5. Lightly grease a 8x8 baking pan (really, any would work as long as it had sides so the mixture doesnt slide off) with Pam.
  6. Pour mixture onto pan and spread out evenly.
  7. Put the pan in the refrigerator for 30 minutes or until firmed.
  8. Preheat the oven to 425 degrees F.
  9. Brush the polenta mixture with extra virgin olive oil and cut into strips about 2 inches wide.
  10. Bake in the oven for 20-25 minutes or until golden brown.
  11. Garnish with your favorite herbs.
