Date Nut Bread
- 8 oz. pitted dates
- 2 tbsp. butter
- 1 cup soft brown sugar
- 1 tsp. baking powder
- 1 cup boiling water
- 2 cups bread flour
- 1 dash of salt
- 1/4 tsp. bourbon vanilla extract plain will also do.
- 1/2 cup chopped and toasted pecans
- 2 egg whites.
- Chop the dates in a food processor until it sticks together and forms a ball.
- Put the chopped dates in a mixing bowl with the butter, brown sugar and then the boiling water and just stir to break up the ball of dates and let sit for 10 minutes.
- Then add the rest of the ingredients.
- Mix until smooth.
- Pour into a greased and floured loaf pan.
- Bake at 325F.
- for 1 hour until a knife pulls out cleanly.
- Let cool for 10 minutes then turn out on to a cooling rack for an hour to cool.
