Carrot Cake I

  1. Mix all ingredients in order; beat well.
  2. Pour into 2 9x5x2 inch loaf pans.
  3. Bake at 350F (180C) one hour, or until done.
  4. Cool.
  5. Frost with the following frosting, if desired.
  6. Frosting: Mix all ingredients well.
  7. Spread frosting over cooled cake.
