Low Fat Country Turkey Loaf
- 1 lb lean ground turkey
- 12 cup carrot
- 12 cup onion
- 12 cup mushroom
- 14 cup sweet red pepper
- 12 cup canned tomato sauce
- 2 tablespoons soy sauce
- 12 cup dried breadcrumbs
- 14 cup egg substitute
- 14 teaspoon garlic powder
- 14 teaspoon table salt
- 14 teaspoon black pepper
- Preheat oven to 350F Grease a shallow baking pan; set aside.
- Dice the carrots, onions, mushrooms and red peppers.
- In a large bowl, combine turkey, carrot, onion, mushroom, bell pepper, tomato sauce, soy sauce, bread crumbs, egg substitute, garlic powder, salt and pepper; mix well.
- Shape turkey mixture into a loaf in prepared pan.
- Bake, uncovered, for 1 to 1 1/2 hours or until cooked through and starting to brown.
- Let stand several minutes before slicing.
