sig's Beans with Mushrooms,
- 2 tbsp olive oil
- 4 tbsp butter
- 2 shallots, chopped
- 3 garlic cloves, crushed
- 9 cup mixed mushrooms, thickly sliced
- 4 pieces sun-dried tomatoes in oil, drained and chopped
- 6 tbsp dry white wine, use one one that you would drink
- 7 oz can pinto beans, drained
- 7 oz can borlotti beans,drained
- 3 tbsp freshly grated Parmesan cheese
- 2 tbsp chopped fresh parsley
- 1 pinch each off salt and freshly ground pepper
- 1 freshly cooked pappardelle pasta to serve
- Heat the oil and butter in a frying panand fry the shalotts until soft.
- Add the garlic and mushrooms to the pan and fry for 3-4 minutes.
- Stir in the sun-dried tomatoes, wine and seasoning to taste.
- Stir in the beans and cook for about 5-6 minutes, until most of the liquid has evaporated and the beans are warmed through.
- Stir in the Parmesan cheese.
- Sprinkle and serve immediately with the pasta.
