Heavenly Sweet Cappuccino Chip Muffins With a Cream Cheese Sprea
- 2 cups all-purpose flour
- 34 cup sugar
- 2 12 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 12 teaspoon salt
- 1 cup milk
- 2 tablespoons instant coffee granules
- 12 cup margarine, melted
- 1 egg, beaten
- 1 teaspoon vanilla extract
- 34 cup semi-sweet chocolate chips
- 4 ounces cream cheese
- 1 tablespoon sugar
- 12 teaspoon instant coffee granules
- 12 teaspoon vanilla extract
- 14 cup miniature semisweet chocolate chips
- optional cocoa powder, to taste
- Using a hand mixer, mix together the spread ingredients, cover, and refrigerate until serving.
- For the muffins: In a bowl, combine the flour, sugar, baking powder, cinnamon, and salt.
- In another bowl, stir the milk and coffee granules until coffee is dissolved.
- If you prefer a more mild coffee flavor, you can add less granules with no problem.
- The recipe does not have an extremely strong coffee flavor in the first place, though, so these are kid taste approval safe!
- Add butter, eggs, and vanilla to the coffee mixture.
- Stir into the dry ingredients until combined, but do not over mix.
- Fold in the chocolate chips.
- Fill paper-lined muffins cups two-thirds full and bake at 375 degrees F for 17-20 minutes or until a toothpick inserted into the center comes out clean.
- Cool for 5 minutes before removing from the pans.
- Let muffins cool all the way before applying spread, or the spread will melt.
