Mexican Skillet
- 1 lb vegetarian sausage (Gimme Lean)
- 1 onion, diced
- 1 bell pepper, diced
- 2 cups uncooked elbow macaroni
- 1 (28 ounce) can tomatoes
- 1 (11 ounce) can mixed mushrooms, drained
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 tablespoon chili powder
- 1 (8 ounce) cartondairy free sour cream
- In a large skillet, saute the sausage, onion and bell pepper until vegetables are tender.
- Combine the rest of the ingredients, except the sour cream, cover and simmer for 15 minutes, stirring occasionally.
- Add sour cream and cook for another 5 minutes.
