Spinach Stuffed Turkey Meat Loaf
- 1 cup mushroom, coarsely chopped
- 14 cup chopped onion
- 2 garlic cloves, minced
- 2 tablespoons olive oil
- 10 ounces frozen chopped spinach, thawed and well drained
- 34 teaspoon salt, divided
- 12 teaspoon pepper, divided
- 12 cup shredded mozzarella cheese, divided (2oz)
- 12 cup parmesan cheese, grated
- 1 lb ground turkey
- 34 cup uncooked quick-cooking oats
- 12 cup milk
- 1 large egg
- 1 teaspoon dried Italian seasoning
- Saute mushrooms, onion, and garlic in hot oil in a large skillet until.
