Skillet Frittata

  1. Wrap handle of 10-inch nonstick skillet with foil.
  2. Heat oil in skillet on medium heat.
  3. Add chopped vegetables and hash browns; cook 5 min., stirring occasionally.
  4. Whisk eggs, water and mustard until blended; pour over vegetable mixture.
  5. Cook 10 min.
  6. or until center is almost set; top with cheese.
  7. Heat broiler.
  8. Broil frittata, 6 inches from heat, 5 min.
  9. or until cheese is melted.
