Skillet Frittata
- 1 Tbsp. oil
- 1 cup chopped broccoli
- 1 red pepper, chopped
- 1 small onion, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 2 cups ORE-IDA Shredded Hash Brown Potatoes
- 6 eggs
- 1/4 cup water
- 2 tsp. GREY POUPON Dijon Mustard
- 1 cup KRAFT 2% Milk Shredded Cheddar Cheese
- Wrap handle of 10-inch nonstick skillet with foil.
- Heat oil in skillet on medium heat.
- Add chopped vegetables and hash browns; cook 5 min., stirring occasionally.
- Whisk eggs, water and mustard until blended; pour over vegetable mixture.
- Cook 10 min.
- or until center is almost set; top with cheese.
- Heat broiler.
- Broil frittata, 6 inches from heat, 5 min.
- or until cheese is melted.
