Noodle-Pineapple Kugel
- 1/4 lb. margarine
- 1 (4 oz.) pkg. cream cheese
- 1/2 c. sugar, with 2 tsp. cinnamon
- 2 eggs
- 8 oz. broad noodles
- 1 medium can crushed pineapple
- corn flake crumbs
- 2 c. all-purpose flour
- 2 tsp. baking powder
- 1 tsp. salt
- 2/3 c. shortening
- 1/3 to 1/2 c. milk
- 6 medium cooking apples, peeled and cored (about 5 oz. each)
- 1 c. sugar
- 2 Tbsp. butter or margarine
- 1 1/4 tsp. ground cinnamon
- Nadine Shirley, one of the volunteers known as Apple Pandowdies, passed away before last Apple Jubilee in Waverly, Missouri.
- Her daughter, Pat Maycock, continues Nadine's tradition of baking apple dumplings for the celebration, using local Jonathan apples.
- Baking powder lightens the flaky pastry.
