3-Bean Salad With Marinated Sweet Onions and Roasted Peppers

  1. Salad Dressing: In a mixing bowl, combine all ingredients.
  2. Process in food processor until smooth.
  3. Makes 2/3 cup.
  4. Salad: Drain beans in colander.
  5. Place in large bowl with peppers.
  6. Add 1/2 cup of prepared salad dressing and toss gently.
  7. Cover and refrigerate at least 1 hour, preferably overnight.
  8. Reserve and refrigerate remaining salad dressing.
  9. Onion Garnish: In another bowl, toss the onion with the vinegar sugar and 1/2 teaspoon salt.
  10. Cover and refrigerate.
  11. At serving time, adjust seasoning on beans.
  12. Add remaining salad dressing, if desired.
  13. Garnish with sliced onion mixture.
