Penne Pasta In Vodka Sauce

  1. Remove the skin from the sausage and saute it in the olive oil.
  2. Break it up with a wooden spoon as it cooks.
  3. Add the onion and saute until soft.
  4. Add garlic and cook one more minute.
  5. Deglaze the pan with the vodka, scraping the browned bits off the bottom.
  6. Add tomatoes, salt and pepper, and simmer for 15 minutes.
  7. (Break up the tomatoes if whole).
  8. Add the cream and simmer a few more minutes.
  9. Finish with basil and parsley and serve over the Penne.
