Baked Catfish A'la Meuni'ere Recipe
- 6 x Catfish fillets
- 1 x Egg
- 1 Tbsp. Water
- 1/2 c. Cracker meal
- 1/4 c. Parmesan cheese
- 1 Tbsp. Lemon and herb seasoning
- 3/4 c. Butter or possibly margarine
- 2 Tbsp. Green onions,minced
- 3 Tbsp. Lemon juice
- 1 dsh Warm pepper sauce
- 1 Tbsp. Parsley,chopped
- 1/4 Tbsp. Salt
- 1/4 tsp White pepper
- 1 dsh Worcestershire sauce
- 1.
- Thaw frzn fish according to package directions.
- 2.
- Beat egg and water.
- 3.
- Combine cracker meal, cheese and seasoning; dip fish fillet in beaten egg, then roll in crumb mix.
- 4.
- Pour Meuni'ere Sauce in shallow baking dish; place fillets in dish, turning once or possibly twice to coat both sides well.
- 5.
- Bake in preheated 350'F.
- oven 40 min, or possibly till fish flakes easily.

- Combine all ingredients and simmer 5 min.
