Alaska Snow Crab Pasta Parmesan Recipe
- 3 1/2 lb Alaska snow crab clusters thawed if necessary
- 8 ounce dry fettuccine
- 3 Tbsp. melted butter
- 1/2 c. part-skim ricotta cheese
- 1/4 c. grated Parmesan cheese
- 1 c. cooked peas
- 1 c. diced tomatoes
- 2 Tbsp. Lemon juice
- 2 tsp dry basil
- 1 x garlic clove pressed
- Reserve 4 snow crab clusters to garnish plates.
- Remove crabmeat from remaining crab clusters.
- Cook pasta according to package directions.
- While pasta is cooking, place crabmeat on microwave-safe plate.
- Cover with vented plastic wrap and microwave on High power for 2 min, till warm.
- Drain pasta and toss with butter, ricotta and Parmesan.
- Toss with crabmeat and remaining ingredients except snow crab clusters.
- Season to taste with salt and pepper.
- Steam remaining crab clusters 4 to 5 min and serve alongside pasta.
- This recipe yields 4 servings.
