Simple Seafood Caesar

  1. Cut rye bread into small cubes or triangular shapes.
  2. Bake in a moderate oven 180 degrees C for 15 - 20 minutes or until well dried and crisp.
  3. Arrange cos, radicchio, spring onions and seafood onto a large serving platter.
  4. Scatter over lemon zest, croutons and black pepper.
  5. Chill.
  6. Drizzle salad with dressing, sprinkle with parmesan cheese.
  7. Serve immediately.
