Simple Seafood Caesar
- 4 slices dark rye bread, crusts removed
- 200g baby cos lettuce leaves
- 1 radicchio lettuce, broken in bite size pieces
- 4 spring onions, diagonally sliced
- 250g seafood extender, or cooked prawns, or cooked white fish
- coarsely grated zest of one lemon
- black pepper
- 1/3 cup KRAFT FREE* Coleslaw Dressing
- 1 tablespoon KRAFT* Grated Parmesan Cheese, for sprinkling
- Cut rye bread into small cubes or triangular shapes.
- Bake in a moderate oven 180 degrees C for 15 - 20 minutes or until well dried and crisp.
- Arrange cos, radicchio, spring onions and seafood onto a large serving platter.
- Scatter over lemon zest, croutons and black pepper.
- Chill.
- Drizzle salad with dressing, sprinkle with parmesan cheese.
- Serve immediately.
