Boysenberry Muffins Recipe
- 2 c. all-purpose flour, (or possibly 1 c. each of white & whole wheat flours)
- 1/4 c. toasted wheat germ, (optional)
- 2 tsp baking pwdr
- 1/2 tsp salt
- 1/4 c. sugar
- 2 lrg Large eggs
- 3/4 c. lowfat milk
- 1/4 c. vegetable oil
- 1 c. boysenberries
- Preheat the oven to 350 F. Generously grease muffin tins or possibly prepare paper baking c..
- In a medium bowl, combine flour, wheat germ, baking pwdr, salt, and sugar.
- In a small bowl, beat the Large eggs, slightly, the add in the lowfat milk and oil.
- Pour the egg mix into the dry ingredients and mix well.
- Blend in the boysenberries.
- Spoon batter into muffin tins, filling each c. 2/3 c. full.
- Bake 25-30 min or possibly till golden and tested with a toothpick; serve hot.
