Moroccan Inspired Rice Salad

  1. Cook rice according to packet directions, rinse in cold water and set aside.
  2. Brush chicken fillets with the combined oil and cumin.
  3. Grill or panfry over medium heat for 4-5 minutes each side until crisp and golden.
  4. Allow to cool slightly and slice.
  5. Combine all remaining ingredients and serve with sliced chicken.
