Platanos Maduros
- 3 or 4 very ripe plantains, peeled
- Corn, grapeseed, or other neutral oil for frying
- Salt and black pepper to taste
- Lime wedges for serving
- Cut the plantains into about 1-inch pieces.
- Put about 1/16 inch of oil in a large skillet over medium heat and, a minute later, add the plantains.
- Cook, turning as necessary and adjusting the heat so the plantains brown slowly without burning, 10 to 15 minutes.
- Serve hot, sprinkled with salt and pepper, with lime wedges on the side.
