Slow-Cooked Tomato Sauce
- 2 lbs roma tomatoes, peeled, seeded, chopped
- 2 tablespoons olive oil
- 8 ounces Italian sausage
- 14 cup onion, chopped
- 12 cup green pepper, chopped
- 1 garlic clove, minced
- 14 cup chicken broth
- 14 cup dry white wine
- 2 tablespoons fresh basil, chopped
- 14 teaspoon salt (or to taste)
- 14 teaspoon black pepper, freshly ground (or to taste)
- 1 (6 ounce) can tomato paste
- Preheat crock pot to high heat.
- In a medium saucepan, heat olive oil over medium-high heat.
- Cook italian sausage, onion, green pepper and garlic until meat is cooked through and vegetables are tender.
- Add chicken broth, white wine, tomatoes, basil, salt and pepper to saucepan and bring to a boil.
- Carefully transfer hot saucepan contents to preheated crock pot.
- Cover and cook on high for four hours, stirring occasionally.
- For a quicker method, reduce saucepan heat to low-medium and simmer for 2 to 2 1/2 hours, stirring occasionally.
- During last 30 minutes of cooking, stir in tomato paste until incorporated well (no clumps).
- Cover and allow to cook for remaining time.
- Serve over pasta of your choice.
