Homemade Gravy
- 14 lb light butter
- 2 ounces yellow onions, finely chopped
- 1 garlic clove, finely chopped
- 4 ounces mushrooms, chopped
- 14 cup flour
- 1 teaspoon kosher salt
- 12 teaspoon fresh ground black pepper
- 2 cups chicken stock
- 1 tablespoon brandy
- In a large pan, heat the butter until it melts.
- Add onions and mushrooms.
- Cook on medium-low heat for 5 minutes.
- Add garlic and cook for another 5-10 minutes, until the onions are lightly browned and softened.
- Add flour to the pan, and stir until blended into a paste.
- Blend in the salt and pepper and cook for 2 to 3 minutes.
- Add the chicken stock mixture and brandy.
- Cook uncovered for 4 to 5 minutes until thickened.
- Season to taste, and serve.
