Triple Fruit Bars Recipe
- 1 c. whole wheat flour
- 1 c. all-purpose flour
- 2 c. old fashioned oats, uncooked
- 1 c. butter, melted
- 3/4 c. honey, divided
- 1 1/2 teaspoon grnd cinnamon, divided
- 2 ripe med. bananas, peeled
- 2 tart apples
- 1 1/2 c. raisins
- 1/4 c. brown sugar
- 2 tbsp. grated lemon peel
- 1 additional banana, peeled
- 3/4 c. minced walnuts
- Use greased 13x9" baking pan
- Combine flours and oats.
- Stir in butter, 1/2 c. honey and 1 tsp.
- cinnamon and blend.
- Spread 3/4 of the oat mix in pan.
- Place sliced bananas in blender and puree.
- Core and cut up apples.
- Combine bananas, apples, remaining 1/4 c. honey, 1/2 tsp.
- cinnamon, raisins, sugar, lemon juice and peel in medium saucepan.
- Cover, simmer 10 min, stirring.
- Uncover, simmer 10 min more, stirring.
- Cool.
- Slice banana into apple mix; add in walnuts.
- Fold until blended.
- Spread over flour mix on top.
- Bake at 400 degrees for 20-25 min.
- Cool.
- Cut into bars.
