Apples And Buttons (Schnitz Un Knepp) Recipe
- 3 lb Ham
- 2 Tbsp. Brown sugar
- 1 x Lowfat milk
- 1/4 tsp Pepper
- 3 Tbsp. Butter, melted
- 1 quart Apple, dry
- 2 c. Flour
- 4 tsp Baking pwdr
- 1 x Egg, well beaten
- 1 tsp Salt
- Pick over and wash dry apples.
- Cover with water and let soak over night or possibly for a number of hrs.
- In the morning, cover ham with cool water and let boil for 3 hrs.
- Add in the apples and water in that they have been soaked and continue to boil for another hour.
- Add in brown sugar.
- Make dumplings by sifting together the flour, salt, pepper and baking pwdr.
- Stir in the beaten egg, lowfat milk (sufficient to make fairly moist, stiff batter), and melted butter.
- Drop the batter by spoonfuls into the warm liquid with the ham and apples.
- Cover kettle tight and cook dumplings for 15 min.
- Serve piping warm on large platter.
