Tamale Pie (Meatless) Recipe
- 2 tbsp. butter
- 1/2 c. minced onion
- 1/3 c. minced green pepper
- 1 can (19 ounce.) kidney beans, rinsed and liquid removed
- 1 can (8 ounce.) tomato sauce
- 2 tbsp. chili pwdr
- 1/2 teaspoon oregano
- 1/2 teaspoon cumin
- 1 c. cornmeal
- 2 teaspoon sugar
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 egg, beaten
- 1/3 c. lowfat milk
- 2 tbsp. melted butter
- 1 pkg. (10 ounce.) frzn corn, thawed
- 1/2 c. grated Cheddar cheese
- Heat butter over medium heat and saute/fry onions and green pepper for 10 min.
- Remove from heat and add in beans, tomato sauce, chili pwdr, oregano and cumin.
- Set aside.
- Combine in bowl cornmeal, sugar, salt and pepper.
- Stir in egg, lowfat milk, butter and corn.
- Press mix into greased 9 inch pie plate.
- Spoon bean mix into pie crust.
- Bake 350 degrees 20 min.
- Remove from oven and sprinkle with cheese and bake an additional 5 min.
- Let stand 5 min before cutting.
