Grumbeerekugel or Kougel aux Pommes

  1. Preheat the oven to 375 degrees, and grease and flour a 9-by-9-inch baking pan.
  2. Heat 2 tablespoons of the oil or butter in a frying pan.
  3. Add the onions, and saute until they are golden, almost caramelized.
  4. Set aside to cool.
  5. Grate the potatoes into a microwavable bowl.
  6. Add about a tablespoon of water, and set on high for 1 minute.
  7. Remove from the microwave.
  8. Stir the onions into the potatoes, and add 3 tablespoons of the oil or butter, the salt, a liberal amount of pepper, 2 tablespoons of the parsley, and the egg.
  9. Tear the bread into little pieces, and stir into the potato mixture.
  10. Spoon into the baking dish, brush with the remaining tablespoon of oil, and bake for 45 minutes to an hour, or until the top is golden.
  11. Sprinkle the remaining parsley on top, and serve.
