Grumbeerekugel or Kougel aux Pommes
- 6 tablespoons vegetable oil or butter, plus more for greasing the pan
- 2 onions, diced
- 1 pound baking potatoes (about 2), peeled
- 1 teaspoon salt
- Freshly ground pepper to taste
- 3 tablespoons diced fresh parsley
- 1 large egg, beaten
- 2 slices white bread, dipped in water and drained very well
- Preheat the oven to 375 degrees, and grease and flour a 9-by-9-inch baking pan.
- Heat 2 tablespoons of the oil or butter in a frying pan.
- Add the onions, and saute until they are golden, almost caramelized.
- Set aside to cool.
- Grate the potatoes into a microwavable bowl.
- Add about a tablespoon of water, and set on high for 1 minute.
- Remove from the microwave.
- Stir the onions into the potatoes, and add 3 tablespoons of the oil or butter, the salt, a liberal amount of pepper, 2 tablespoons of the parsley, and the egg.
- Tear the bread into little pieces, and stir into the potato mixture.
- Spoon into the baking dish, brush with the remaining tablespoon of oil, and bake for 45 minutes to an hour, or until the top is golden.
- Sprinkle the remaining parsley on top, and serve.
