Light Orange Beef and Broccoli

  1. In a small bowl, combine the first six ingredients (orange juice through cornstarch), whisking until the cornstarch is dissolved.
  2. Bring a pot of water to a boil.
  3. Add the broccoli into the boiling water and cook it for just a few minutes, until its tender crisp.
  4. The broccoli will cook a little more once you add it in with the sauce, so make sure not to boil it for too long.
  5. When its done, drain off the water and set broccoli aside.
  6. Heat the oil in a skillet over high heat.
  7. Add the steak and garlic, and cook it, draining off extra fat after a few minutes if needed.
  8. Flip the pieces of meat until each piece is cooked through and the meat is browned.
  9. Add the sauce to the pan and stir for 1 minute until the sauce starts to thicken.
  10. Remove from heat and stir in broccoli.
  11. Serve over rice and garnish with orange zest and/or scallions.
