Light Orange Beef and Broccoli
- 3 Tablespoons Fresh Orange Juice
- 1 Tablespoon Fresh Orange Zest
- 2 Tablespoons Low Sodium Soy Sauce
- 1/4 cups Beef Broth
- 13 cups Orange Marmalade
- 2 Tablespoons Cornstarch
- 1 head Fresh Broccoli, Washed And Cut Into Bite-sized Pieces
- 1 teaspoon Oil
- 1 pound Flank Steak, Very Thinly Sliced Against The Grain
- 2 cloves Garlic, Minced
- Optional Garnish: Orange Zest And/or Chopped Scallions
- 4 cups Cooked Rice, More Or Less As Desired, For Serving
- In a small bowl, combine the first six ingredients (orange juice through cornstarch), whisking until the cornstarch is dissolved.
- Bring a pot of water to a boil.
- Add the broccoli into the boiling water and cook it for just a few minutes, until its tender crisp.
- The broccoli will cook a little more once you add it in with the sauce, so make sure not to boil it for too long.
- When its done, drain off the water and set broccoli aside.
- Heat the oil in a skillet over high heat.
- Add the steak and garlic, and cook it, draining off extra fat after a few minutes if needed.
- Flip the pieces of meat until each piece is cooked through and the meat is browned.
- Add the sauce to the pan and stir for 1 minute until the sauce starts to thicken.
- Remove from heat and stir in broccoli.
- Serve over rice and garnish with orange zest and/or scallions.
