Baked to Perfection Chicken Quesadillas

  1. Arrange one oven rack on the top shelf and the other on the bottom.
  2. Preheat boiler on high.
  3. In a medium bowl, toss cubed chicken with fajita seasoning.
  4. Set aside while oven preheats.
  5. When oven is ready, place chicken on a greased baking tray.
  6. Place tray on the top shelf of the oven and broil for 5 minutes.
  7. Remove chicken and lower oven temperature to 350 degrees F.
  8. In a large skillet, heat vegetable oil over medium.
  9. Add red pepper, green pepper, onion and chicken.
  10. Continuously stir and cook for 510 minutes.
  11. Take a tortilla wrap and spread half the chicken mixture onto one side.
  12. Sprinkle with half the cheddar cheese and Monterey Jack cheese.
  13. Fold tortilla wrap over and place on a baking tray.
  14. Repeat with the second tortilla wrap.
  15. Place tray in the middle rack of the oven and bake for 10 minutes until cheese is melted.
  16. Cut into 4 slices and serve with guacamole, salsa and sour cream.
