Raspberry Coulis

  1. Puree raspberries with sugar and lemon juice in a blender or food processor.
  2. Pour mixture through a fine sieve into a bowl, pressing on solids.
  3. Scoop sorbet into individual serving bowls and top with coulis.
  4. Garnish with a few fresh raspberries.
  5. Coulis keeps 3 days, covered and chilled.
