Baked Sweet Potatoes With Candied Ginger Cream

  1. Preheat oven to 375.
  2. Wrap each potato in foil.
  3. With a fork, poke several holes in flesh.
  4. Bake until tender, about 1 hour.
  5. Slice potatoes open and insert 1 tablespoon in each.
  6. Sprinkle with salt and pepper.
  7. Meanwhile, in a small bowl, mix sour cream, scallions, and candied ginger.
  8. Serve as a topping for the potatoes.
