Baked Sweet Potatoes With Candied Ginger Cream
- 4 sweet potatoes or 4 yams
- 4 tablespoons butter
- 12 teaspoon salt
- 14 teaspoon pepper
- 1 cup sour cream
- 2 scallions, chopped
- 1 tablespoon candied ginger, finely chopped
- Preheat oven to 375.
- Wrap each potato in foil.
- With a fork, poke several holes in flesh.
- Bake until tender, about 1 hour.
- Slice potatoes open and insert 1 tablespoon in each.
- Sprinkle with salt and pepper.
- Meanwhile, in a small bowl, mix sour cream, scallions, and candied ginger.
- Serve as a topping for the potatoes.
